Vegan chilli con carne recipe with a twist

Do you want to impress your non-vegan friends and relatives? Or even make kids try new food, like quinoa? Then you should definitely try this vegan chilli con carne recipe; as you may have guessed the twist is using quinoa. We suggest you serve it with nachos and vegan cheese. You may even be able to fool your non-vegan friends into thinking it’s a normal chilli con carne recipe. We think it’s one of the best vegan chilli recipes – we hope you agree!

Ingredients:

1 tbsp of oil

1 onion

2 cloves of garlic

3 red chillies

3 fresh tomatoes

500g of tomato sauce

1 tbsp of rough ground black pepper

1 tbsp of paprika powder

1 tbsp of cumin powder

1 tsp of cacao powder

1 tsp of coriander powder 

1 can of black beans

1 can of kidney beans

1 can of sweetcorn

juice of ½ lemon 

1 sprig of fresh coriander

200g of dry quinoa 

salt to taste

Method:

  • First, we prepare the chilli. To do it, start by chopping garlic, onions, and chillies.
  • Sautè them in a pan with oil. In the meantime chop the tomatoes.
  • Now add the tomatoes to the pan and stir them. Wait until they are wilted.
  • It is time to include all the spices and give it a good mix.
  • Incorporate the tomato sauce and wait until it is cooked. This will take some time. 
  • Meanwhile, you can cook the quinoa following the instructions on the package. Remember to always wash it under running water first, otherwise, it will be bitter. The quinoa will enhance the dish as it mimicks the texture of ground meat.
  • Now that the tomato sauce is almost cooked you can add the beans and the sweetcorn. Before doing it, if they are from the can, wash them under running water to remove the salt and any additives. Give it a good mix and let them cook for 10 minutes.
  • It is time to combine the chilli with the quinoa.
  • Now turn off the fire and add the lemon juice, chopped fresh coriander, and salt.
  • You can eat the vegan chilli con carne with a twist in many ways, but here we decided to propose it with nachos, cheese, and jalapenos, a typical pub dish but VEGAN.
  • To prepare it, assemble on a baking plate the ingredients in the following order: chili con carne with a twist, cheese, jalapenos, and nachos. Now add the vegan chilli con carne (but just a bit otherwise the tortilla chips will become soft), a lot of cheese, and the slices of jalapenos.
  • Put it in the oven for 10-15 minutes at 240°C to melt the cheese. With this amount of chilli, you will have around four/or five portions.
  • The only thing missing now is to enjoy them together with a refreshing drink.
